The findings in this study underscore earlier test results from various other studies showing the benefits of high flavanol chocolate to the heart through vasodilation and that when it is consumed ‘moderately’ (example: daily dietary intake) that there is definitive evidence to helping promote wellness in the body.     Numerous studies have shown the link between inflammation inside the body and human health. There is a link between your oral health and heart disease but did you know that there is a link between your oral health and cancer? Science continues to focus on inflammation not only as it relates to heart health but your overall health. Before anyone can even begin to understand the implications of inflammation they really need to wrap their head around what causes inflammation.   6. Chocolate Is A Natural Medicine

    Doctors use chocolate as medicine.Not many people realize or know that chocolate used to be used as medicine. Lets take a step back in time and learn about chocolate medicine. Without going into great detail about the history of chocolate I’d like to help you get a deeper understanding of how chocolate was used as medicine prior to Dutch Processing and those steps that stripped away the ‘medicinal properties’ of chocolate.

    Early discoveries have shown writings found in the Yucatan that in the 1500′s potions that contained cacao and mixed with spices, honey, pepper and tobacco juice were used to treat various diseases and skin eruptions. In 1529 a Spanish Priest, Bernardino de Sahagun compiled oral histories from informants on chocolate in the Florentine Codex. One of his comments and warning was to not drink green cacao because it makes one drunk but that an ordinary amount of cacao is drunk ‘it gladdens one’. It is said, “I take cacao. I we my lips. I refresh myself.”

    1552 – Cacao flowers were mixed with herbs and used as a poultice for injured feet.

    1577 – Francisco Hernandez (New Spain) was a naturalist and court physician to the King of Spain who mentioned numerous nutritional and medical uses of the chocolate beverage and noted, “A straight dose of cacao is useful for problems of the liver.”

    1592 – Agustin Farfon mentioned, “Chocolate that is served as a hot beverage is used as a laxative.”

    1658 – Francisco Redi (Italian Chief Physician) became court physician to Ferdinando II de’ Medici, Grand Duke of Tuscany and created a recipe for him who relied on this drink daily. It was thought that the prince was a hypocrondriac or that his illness claims were to disguise his need for the chocolate drink.

    1662 – Henry Stubbe (English Explorer) created his own recipe that consisted of cacao, anise seeds, nutmeg and cornmeal. He also noted that adding Vanilla would strengthen the heart. He also noted that mixing cacao with peppers would help women and their menstrual cycles. He recommended that people drink at least two cups a day.

    It was soon after William Hughes publication that American cookbooks began to promote chocolate as a nutritious breakfast food and that lasted through the 19th Century.

    1719 – D. de Quelus (French) recommended drinking chocolate for ‘exhausted spirits’ and noted that one ounce of chocolate contains as much nutrition as a pound of beef. He began to create his own recipes and began adding spices like Cinnamon. Drinking this recipe would cause a ‘good purge’.

    1727 – Sir Hans Sloan was the physician for Queen Anne and King George II. He would combine chocolate with milk to increase digestibility. Later, Cadbury would use this recipe from 1849-1885. This recipe was considered a health food and was noted to be ‘light on the stomach.’ It was considered a great use for all ‘consumptive’ cases.

    1728 – An Italian observed and mentioned, “There is no counting the money that Europeans nowadays spend on cocoa and other chocolate drugs.”

    1741 – Carolus Linnaeus didn’t like the name ‘cacao’ and gave it it’s botanical name ‘Theobroma’. He began to examine it’s medical uses and responded by saying, “Chocolate responded well to wasting or thinness caused by lung and muscled disease, hypochondria and hemorrhoids.”

Saint-Arroman wrote about chocolate in his book ‘Coffee, Tea and Chocolate: Their Influence Upon Health, The Intellect and Moral Nature of Man’ stating “this alimentary paste, which some persons in good health honour with their partiality and which the physicians recommended to certain sick persons, deserves to be well known, that all may know what temperaments it suits and in what circumstances it may be injurious.” He also began to warn that there were ‘greedy merchants’ who were stretching their chocolate by adding Rice Flour along with other starches. This warning was letting others know that some who consumed ‘adulterated’ chocolate may have stomach and digestive problems. (The was the Industrial Revolution and when chocolate began to lose it’s medicinal properties.)

    1870 – Florence Nightingale used chocolate and considered it a basic staple to treat the ill. She mentioned in her notes, “….soup, wine and chocolate could certainly have saved hundreds of lives.”

    1895 – 1930′s – Pharmaceutical companies began producing chocolate covered pills to disguise the bad taste of medicine. You may know of a laxative called ‘Ex-Lax’ that was very popular. There were many chocolate companies that extended their roots into the pharmaceutical arena.

    Dr Weil and raw organic chocolate 1983 – Dr. Andrew Weil concluded that chocolate was a drug. He was the director of Integrative Medicine at the University of Arizona and has written many books on natural medicine and healing.     1994 – Allen M.     Is your dark chocolate healthy? As most of you already know, I have spent a lot of time researching the health benefits of chocolate that has been fueled by my body healing. There is an abundance of information on chocolate, however, every article I have read all point to flavanols found in chocolate that make it healthy. There have been a lot studies using unprocessed cocoa, placebo’s and commercialized processed chocolate and each article sheds light on the health benefits of chocolate. A large majority of these articles conclude there are significant improvements on the human body but are also stating that commercialized chocolate is higher in sugar content. Science has shown that a cacao that is at least 70% or higher does provides benefits to the human body highlighting the ‘flavanols’ as the primary source.

There are many holiday’s that allow people to ‘give’ or to ‘celebrate’ with chocolate by giving it as a gift for Easter, Valentines Day and other holidays. Now for the truth: The media has taken one of our favorite confections and glorified it misleading many by sending messages that ‘all dark chocolate’ is healthy and that is just not true at all. The ‘wrong’ message has permeated to what Nutritionists and Doctors tell their clients or patients.

    One of the top leaders in the study of chocolate and it’s health benefits is Dr. Norm Hollenberg who spent time studying the Kuna Indians off the coast of Panama was quite intrigued with their overall health and absence of disease that we hear about all the time in the news. When he began to report on his findings many became excited but most took his information out of context and labeled all dark chocolate as having health benefits. He has now clarified for the world what makes dark chocolate healthy. Will the media absorb this information in time for their next report on ‘dark chocolate is healthy?

    Gourmet healthy chocolates has the best dark chocolate.Dr. Norman Hollenberg and Dr. Naomi D. L. Fisher recently wrote, “The use of the word “dark” in dark chocolate, prominent in the title of this article, the article it accompanies, and on chocolate bar wrappers in high-end groceries around the world is symptomatic of this interest in identifying a simple, reliable, and inexpensive assay for what is good in chocolate. What makes it healthy? As is stated clearly in the report by Flammer et al in this issue of Circulation, we have probably identified the major chemical mediators: the subclass of flavonoids called flavanols, including especially the monomers epicatechin and catechin, and possibly procyanidins and metabolites. All cocoa is created flavanol-rich. It is primarily the processing of natural cocoa solids into cocoa powder or into confectionary chocolate that determines whether a final product is flavanol-rich or -poor. Because flavanols are bitter, manufacturers have often treated natural cocoa with processing techniques that necessarily destroy the flavanols as they enrich flavor and improve consistency.” They also stated, “The use of the term “dark chocolate” is misleading: There is nothing about the color of the chocolate that will tell you the flavanol content. One of the key places in the manufacturing chain where significant loss of flavanols occurs, after fermentation, is an alkalization step called dutching. The Dutchman van Houten discovered 200 years ago that adding alkali-potash to cocoa nibs would enhance the taste, texture, and appearance of the cocoa. Dutched cocoa has the bitterness eliminated, together with most of the active flavanols. One relatively underreported effect of alkalization is, in fact, darkening of cocoa, so that a very dark chocolate might be essentially devoid of flavanols.”

    Science has also requested that food industry begin labeling the flavanol content in their chocolate, primarily dark chocolate, products. Will the media pick up on this information and share this important news? I certainly hope so.   9. Dark Chocolate Is Good For Diabetics

    Dark chocolate helps to stabilize blood sugars in diabetics.I often hear comments from many people that diabetics cannot have chocolate. While it is true that they should not have candy with chocolate in it they can have chocolate. Remember that candy with chocolate in it is laced with fillers and refined white sugars, the ‘bad’ chocolate. The ‘good chocolate’, gourmet healthy chocolates are just what the doctor may order to help diabetics. In the Journal of Diabetic Medicine one study shows the difference between the good chocolate with high polyphenols (high flavanoids or plant based antioxidants) and bad chocolate with low polyphenols.

    This study reported was the first of it’s kind with diabetics. According to the University of Hull:

    “Twelve individuals with Type 2 diabetes were selected and those who participated were on stable medication. They were given 45gr of dark chocolate to eat daily for 16 weeks in a double blind study. The patients were given chocolate either with or without a high cocoa content. The dark chocolate contained 85% cocoa solids compared to the placebo which contained no cocoa solids but was dyed the same colour as the dark chocolate. Individual 15g foil wrapped bars were provided and the volunteers were asked to consume one bar three times a day. The patients were advised not to consume any other chocolate for the duration of the study and they were instructed to make no changes to their diet and lifestyle.”

    After the 16 week study there were significant increases to their HDL (High Density Lipoprotein) prompting comments from endocrine specialists advising diabetics to make a high polyphenonl (high flavanol) dark chocolate part of their daily dietary intake. Diabetic cooking to help keep your blood sugar stable.In the Hull University article Steve Atkin, Professor of Diabetes and Endocrinology, who led the study says: “People with Type 2 diabetes are twice as likely to develop cardiovascular disease and since one of the main contributory factors to heart disease is a low level of HDL or ‘good’ cholesterol, the findings that dark chocolate can improve this, means the results of this study are hugely significant.”

    The conclusion in the study as reported in the Journal of Diabetic Medicine states, “High polyphenol chocolate is effective in improving the atherosclerotic cholesterol profile in patients with diabetes by increasing HDL cholesterol and improving the cholesterol:HDL ratio without affecting weight, inflammatory markers, insulin resistance or glycaemic control.”

More research has been done on one of our favorite confections in the last ten years giving chocoholics everywhere a chance to rejoice. There is very little health benefits in milk chocolate and none at all in white chocolate. The Theobromine found in the cacao bean is a natural vasodilator. That means that it helps open up the veins and let blood flow easily thus reducing blood pressure and cholesterol. Another benefit to eating dark chocolate that is high in antioxidants is the ability for the compounds found in chocolate help to fight free radical damage and oxidation which is killing your DNA. You can’t escape oxidation! Oxygen is something you need it to live and it’s all around you. Each time you take a breath and exhale not all of that oxygen leaves the body.
